Most groceries sell a common sweet basil that is considered the basic basil most widely grown and sold in the U.S. This common variety basil is also know as Mediterranean or European basil, The taste is sweet, floral and delicate, with slightly minty notes, an anise-like aroma and clove-like undertones. The leaves are used fresh or dried.
Genovese basil is a special variety of sweet basil that originated in Italy. This basil is less likely to become bitter after long, slow periods of cooking. Genovese basil has a reputation for making the best pesto and “insalata caprese” (a dish consisting of tomato slices topped with mozzarella cheese and fresh basil leaves).
Genovese basil would a spectacular addition to your herb garden (and slow cooked spaghetti sauce). If you are buying a basil plant for growing in the Woodstock GA growing zone 7B, then consider Genovese basil. This basil plant is less likely to bolt and flower in our GA hot summer weather. Flowering during bolting stops the vegetative growth of the basil plant.
